Chicken & Pumpkin Salad with Miso Dressing

I’m obsessed with making yummy salads, I eat them pretty much daily and the key to enjoying salads is always the dressing! This Miso one I adapted from a recipe I found and I think it is amazing, I hope you enjoy it as much as I did.

Salad ingredients:

  • Baby Spinach
  • Leftover chicken
  • Roasted Pumpkin
  • Blanched Green Beans
  • Cherry Tomatoes
  • Feta Cheese
  • Toasted Pumpkin, sunflower seeds and pine nuts

Miso Dressing:

  • 1/4 cup white miso paste
  • 1 Tablespoon of Smooth Peanut Butter
  • 1-2 Tablespoons of Honey
  • 2 teaspoons Soy Sauce
  • 3 Tablespoons Rice Wine Vinegar
  • 1 teaspoon of Sesame Oil
  • 2 Tablespoons of Water

Whisk well and then add homemade Mayo until you get the flavour combination you like.

Drizzle over salad!
